Banana nut muffins! !#

1/2 cp all purpose flour
1/3 cup walnuts chopped up
1/4 sugar
1/2ts of bs and baking powder
A pinch of salt
1 ripe banana
1 large egg
1 tbs unsalted butter(melt that stuff and set aside)
1tbs of yogurt mama uses Greek vanilla it's amaze balls
1 splash of vanilla

First you mix all dry ingredients first.
In a separate bowl mix wet and then combine.  Put in a muffin pan. Make sure you spray pan or cupcake liners with butter spray like pam. or you can make bread and cook roughly 30-40mins just stick a toothpick in the center to check at 30mins. All ovens are different
****try not to over mix or you gonna have some flat ass muffins my friend ***

Have some of that smoked rib roast left over??? Here are 2 easy to make dishes for left overs :-)

So ever have you have left over beef? What to do what to do.

Here is one idea to start your day off right.

Cut about 1/2 cup of you smoked roast into small cubes set aside.
Depending on your family size whisk together 5 eggs (this was for 3 people)
Season with salt and pepper
Also grab some grated cheddar  1/4 of a cup should be fine but feel free to add more.

Heat a non stick skillet and place about 1tbs of butter. Let melt and toss in your beef add eggs on top and lower the heat to med so it cooks evenly.
Now if you a awesome flipper loosen the eggs from the pan ever so gently and flip so it's still a full circle.  Put the cheese on one half and wait until it melts then serve.
**optional  take you favorite homemade salsa and top your omelet with it for a south of the border spin***

A second way to use up the rest of that beef is to take a serrated knife and carve ever so thin slices for homemade roast beef sandwiches. Toast your bread and spread on some horseradish cream sauce and mayo. Top with lettuce and tomato ( if you like) and enjoy

Smoked standing rib roast

Here is what you will need for this meal.

I standing rib roast(5lbs)
Horseradish  sauce(3tbs)
Garlic cloves minced ( 4 big ones)
Salt &pepper to taste

**optional  I small bag of baby carrots 2-3big russet potatoes  covered in evoo S&p placed inside a cast iron grill pan and placed on the grill while meat cooks as seen in photo.

You're going to mix all the ingredients together and rub it over the entire roast if you can do night before and wrap in plastic I recommend! But same day is just as good.

Next your going to get your grill ready I use charcoal with misquite wood chips and have a constant temp of about 250°f-300°f
Now if you have propane maintaining this temp will be easy you will just need the box to place your wood chips in which you can get from home depot, Lowes etc.
Cook on the grill for about 5hrs or untill the middle temp is 155 which is medium.
Serve and enjoy. 😄😄🍴🍴

Smoked pork shoulder

Here is how you get this beautiful smoked pork shoulder. What you do with it after words is your choice. Endless possibilities :-)

What you will need.
A pork shoulder roast
5 cloves garlic minced or through garlic press
1/bunch of cilantro chopped fine
4 packets of Sazon( a Latin spice made by goya)
Adobo 3tbs(also made by goya get the one that say con ajo on it)
1 1/2tbs of olive oil
Sofrito about 3 tps ( now if you live on the east coast this is easy to find just please by the frozen kind made by goya of you live on the west coast like me. It's kinda a pain in the ass to find but some spanish specialty stores sell it. If not you can alway use the jar kind as a last resort but I will post a recipe on how to make it soon)
 
Grab your roast and stab it with deep holes so you can stuff the seasoning into it and near the bone on the thicker side cut a slit into it. After you have put some holes through out and made the slit your ready for the spices. Take all the ingredients I listed and miss it together. It's going to seem a little dry and that's ok. Your going to do this the night before so the spices have time to really sink in.
After mixing everything in a bowl rub all around the roast and suff into the small holes you created plus the slit at the bottom. Let sit over night.

Now smoking this is no easy endeavor. Your going to put about 30 coal brickets  in your grill lite them and let the fire completely die out while your waiting grab some awesome woodchips I used misquite soak in some water so they don't burn to quickly.  Now that the fire is out and your grill is nice and hot add the wood chips to center where more then likely it's still the hottest. Then smoke your meat. You need to do this about every 3-4hrs when the coals start to completely die and most roast take about 12 hrs so yeah you have to start in the am. You will have to add coals at least 3x with wood chips. But I promise you the end result will leave your guest wanting more!!! I hope you enjoyed this and everyone safe grilling!!
