Today's recipie of the day east pot roast!!!

To prep what I did was roasted garlic in some foil the night before for 30min om 325. This may vary depending on your oven.

Ok to start.
I cut up my pot roast but feel free to leave whole I just find its easier to sear, when cut in to large chunks as seen in the photo below.

Take your pot roast season with salt and better all over and get a pan nice and hot with a little bit of veggie oil or coconut oil. I can't use evoo due to an allergy but you can use that as well.
   Once your pan is nice and hot place your pot roast inside and let brown. You want to make sure to brown on all sides so that way your sealing in the juices and flavor.
In your slow cooker add about half a box of beef stock, 2 rosemary sprigs and about 3 cloves of roasted garlic. Turn on low.
Once your meat is all nice and brown place in your slow cooker and let the magic begin. About an hour before it's done I recommend throwing in some carrots and some baby bliss potatoes and you have your self a full meal ready to go that your family will enjoy.

I know this wasn't a recipie per say as it was a step by step but I will get back to writing proper recipies soon promise. Still getting a feel for the new tech aka laptop. I hope you enjoy this and if you decided to recreate please tag me in it on IG mari110107

Finally at long last!!!

Tommrow I will be restarting my recipies as my laptop comes in tommrow and will be posting more food videos as well on my youtube channel I'm super excited and can not wait to be able to do this. Since I'm confined to my home due to terrible allergies I should have enough time to be able to put up at least 2 recipies a day :-)

When your allergic to as much as I am.

So I have been feeling yucky for almost 2yrs, tummy troubles, bad migraines, loosing more hair then normal and no doctor could find what's wrong. Also my nose is always stuffy. Until I finally got a new doc who re-tested all my allergies, the skin test and a blood test. Turns out I'm allergic to alot of my favorite foods. Like who would have thought wheat and gluten was an actual allergy and not some craze fad huh? So now going on day 3 of not having anything on the no no long list of allergies I'm finally starting to feel better.( also loosing weight more easily which is a plus!) My hair isn't falling out in clumps anymore(yay!!), and I have been headache free for 2days!
      I know 2 days with out a headache or migraine might seem normal to you but for me it was a daily occurrence, even special medicine for said migraines didn't help. So I'm super excited 😄😄.
I will admit. Due to the fact that my allergies are many it makes it harder to eat out ( always feel bad about making chefs go out of there way to make me a special meal when I know there busy).
     Adjusting to the new lifestyle will be a challenge. I mean, I can't have dairy, soy or almond milk lol so my choices for calcium are limited. My trip to the grocery store takes longer because I have to read labels to make sure I don't get anything that has an ingredient that I'm allergic to.
Do you know how much it sucks to be allergic to as much stuff as me? My husband calls me his little bubble wife because I'm allergic to nature lol. Grass forget about it, I swell up like a balloon. A real christmas tree for the holidays, ha nope it will kill me. Some things are easier to avoid then others. Like food. Yes I can stay away from food I can have,But grass that crap is everywhere, as are some of the plants and trees I'm allergic to. So what do I do? Try and cover myself up as much as I can to avoid things touching my skin. ( especially when everyone mowes there lawn like everyday...like really people were in a drought how much grass do you have?!)
     I will still be putting up recipies (no I do not have a laptop yet sorry I am a mom and something more important came up) but my recipies will be more geared around my new diet. Why?  Because I know there are people who have cealic  and also as many if now more allergies then I and I want to help them find delicious meals they can enjoy with out feeling like there eating turtle food. Don't fret healthy people with no allergies I will be putting up recipies for you as well.
If I can help one person. Jus one who is also like me , who has no idea what the heck there suppose to eat ( beside some fruit and veggies). Then I will feel like I have accomplished what I am now set out to do. You are not alone. I know it sucks. We can do this!

*quick side story. Husbands job christmas party was last night and I couldn't eat anything they served at the buffet. I almost cried because I was hungry and everyone was eating but me. I asked for a salad with no dairy, soy or gluten( pretty much lettuce and tomatoes) and the manager brought it out to me and said I hope you enjoy the buffet. I said "I can't I'm allergic to what your serving" so he asked me what I could have and brought me my own special meal. He was awesome. Thanks manager guy at the hilton in San Diego! He was completely understanding as his wife has cealic and can't eat alot of things as well. It made me feel nice that I didn't inconvenience them as much as I thought I would have.

Lime and cranberry cupcakes topped with white chocolate ganache

Want to learn how to make these delicious cupcakes?
I was inspired to make these by a woman at my job who has a lemon and lime tree, and decided to bring us a bushel of limes. Since I got promoted to a management position, I wanted to make something special as a thank you for the time I had working with some of these lovely ladies.

Ok so here is what you will need!
2 cups of flour ( you can use ap or cake flour)
1 cup of sugar
1/4 cup of unsalted butter
1 cup of milk
1/4 teaspoon of baking powder
1/3 tp  salt
1/4 teaspoon of vanilla
1/3 cup of lime juice ( fresh)
5oz of cranberries  (soak these in lime juice for 1 hr then add to batter)

Mix until smooth then put into a cupcake pan bake for 20mins or until a toothpick comes out clean

Now while there cooling whip about 2 cups of whip cream until stiff peaks
As that's whipping melt 2 bars of white chocolate
Once chocolate is melted then gently fold into whip cream. Once the cupcakes are cool, using a piping bag with a big tip or..if you like me and don't have one use a freezer bag and cut a small corner off to pipe onto the cupcakes. Top with dark chocolate shavings and a cranberry.

Smoked Cornish game hen with a carrot puree and a cauliflower puree over mashed potatoes.

You want to get your grill all set first and formost. Make sure there isn't to much flamage going on. I like when the coals are nice and red.
Or..you can use propane..

Any who you want to season your hens with some S&p and a little sage thyme and rosemary. If you are making 2 little hens a tbs of each ingredient should work nicely. I cut my hens in half for faster cooking. When you place them on the grill do skin side down and don't touch for about 15mins. (Depending on flame) you can check if the hens come off the grill easily and have formed a nice crispy layer with out being burned....burned is just not cool.

Now while that's cooking (it took an hr to be fully cooked ) I smoked my cauliflower  and carrots along side and placed my poatotes on to boil. I gave you the recipe for the smoked carrots in a previous recipie. And I think for mash as well so we will move on the the cauliflower puree.
Once it's all smoked and tender place hot in a blender with about a tbs of unsalted butter and a little of cream and salt and pepper you want this to be a little more mild compared to the carrot puree. So less is more. Once you tasted and are satisfied with results. You can finish off your mash. And check to see if your hens have reached an appropriate temp of 165. If so your ready to serve. I hope you enjoy this way to spice up a simple meal :-)

Grilled lamb chops with smoked carrot puree and roasted potatoes

So the lamb chops I got were really cheap. I didn't buy a whole rack. I got the end pieces of the rack that were left over after the butcher made a whole rack. Which tends to be 2 lambs on the bone like the rack...make sence?

Ok so the lambs were just seasoned with salt and pepper and some olive oil. Then grilled until about medium. ( I did this last)

Now here is why I did the lamb last. I thought man how cool would it be to cook the entire meal on the grill?? Not fun lol anyways I seasoned my potatoes with some oil, salt, pepper, and fresh garlic and placed them inside my awesome cast iron grill pan and let it cook for an hr... wasn't done.... almost 2 hrs later they were done if you don't want to go this route your more then welcome to cook them in the oven.

Now the carrots. I took a small bag of fresh carrots and placed them in a aluminum foil like bowl. I let them cook for an hour until they were almost done ( I really hate mushy veggies) also... almost forgot. I took a small cluster of garlic. Took there pesky shell's off and roasted them on the grill for about 30mins or until tender. No season.
Ok now for the finish part. While it's still hot take the carrots and place in blender. Add a little bit of milk until you get roughly smooth consistency.  If still chunky.. add to a small sauce pan until it boils before placing back in blender. Now your going to taste it and think this taste awful right? Add about a tbl of honey and a teaspoon of sugar and salt and pepper to taste and it should taste amazeballs.
You can always add more honey to balance out the bitter flavor from the smoked carrots I would not add more sugar. After everything is all done. You can plate up photo below for refrence.
